A great day to clear your mind

This morning I woke up to a phone call from my financial aid adviser at my school. He informed me that my monthly payment to pay for school has gone from $75 a month to $300 a month. I could feel the tears welling up right when he said that because I knew that I could not afford that kind of a payment. I asked him if I had any other options and he basically told me that there was nothing I could do. I can try and go half time but that might mess with my financial aid that I have currently and then I would have to be going to school an extra year or so because I would not be going to school full time. I know that there are worse things that can happen, and I am sure that everything will work itself out but in that moment I felt sick to my stomach. I was so upset because school is the one thing that I really truly enjoy doing. It is the one thing that I look forward to doing everyday. I love cooking. I finally found what I love to do and in that moment I felt like it was being taken away from me because I do not have that much money. I normally try to be positive about things and see the good in everything, but I just could not see how this would be a good thing. 

Luckily, my amazing boyfriend is 15 hours ahead of me and just happened to be awake. I spoke with him on our walkie talkie app we both have on our phones and he made me feel better about the situation. It truly amazes me how someone can make me feel like a million bucks and he is like a million miles away. I could be going through the worst thing imaginable and he would be the one that shows me the most support. Actually, I know that is true because I have been through some pretty crappy situations and he has shown me that he will always be here for me no matter where he is at in the world. 
That is amazing to me. 
I feel like the luckiest girl in the whole world. 

After I started feeling a little better I went upstairs and woke my sister up and made us some eggs. We decided that we were finally going to go on the hike I have been wanting to go on the whole week! We got ready and headed out. We couldn't really decide where we wanted to go, but eventually chose to go on a small hike on a trail up behind the capitol. We had never been there, but heard good reviews from the internet and thought we would give it a try.

We really had a lot of fun on our hike and It was just the thing I needed. I had time to clear my mind and think about things, but at the same time I could just not think about anything. I could just be in the moment and think about the steps in front of me and that felt good. After our hike Katie and I decided to go to Ruth's Diner. A little place up Immigration Canyon with delicious food. It has been featured on Diners, Drive Ins, and Dives, and we had been there once before and decided it would be awesome to go there!! :) And let me tell you the food was amazing.

We drove around the city enjoying the scenery all around us and just took it in. It was a beautiful day.

While enjoying this beautiful day I decided that at the end of the day I was going to come home and write a blog about what I did and how I felt. I realized that even though crappy things can happen in life you are still going to wake up tomorrow and it is going to be a new day. Whatever bad things come your way you can handle them. Sometimes it really does help to just focus on the steps you need to take to go forward. Whether it is up a hill, or in your life. Life is beautiful. We would not know beauty without the ugly. We would not know happiness without the sadness. I am thankful for my bad days, because in turn it makes me appreciate the good days more. I know that it is hard to think this way sometimes. Believe me. Sometimes things happen and they are so terrible you cannot imagine how you are going to make it to the next day, but somehow you do. 

It is days like today that make me feel good about my life. Make me appreciate all things. Even though the possibility of my little sister, my best friend in the whole entire world, moving to Japan could happen in the next year...Even though my boyfriend lives in Japan for the next two years...Even though I might have to cut back on school, graduate later then my classmates, or even not finishing school could happen....

....at least I know I still have my sister. I still have my boyfriend. And I will always have the memories and things I have learned in school up until now.

Well, I guess that is what I thought about today. In a nutshell anyways. When I start writing a blog I normally write a few and they do not make sense because I have so much going on in my mind that I just start writing and it only makes sense to me. I hope that I organized this in a way that all of you can understand what was going through my brain. I hope that someone can get something out of this as well because I know that life can be crappy, but as long as you can see that you do have something in your life that is good that will get you through the next day. 

No matter what happens no one can take away my happiness from me because I have my family. I have Will. I have cooking. 

Life is good. 

I am strong. 
I am beautiful.
I am Independent. 




Remember, sometimes you have to take things one spoonful at a time. Sometimes that is the only way you can handle life. At least for me anyways :)

Funny how things work out :)

This is a blog about relationships...just warning you now. I had a lot of feelings and had been thinking about these things for a few weeks now and I really just wanted to write it down.

People come and go in your life for a reason. You do not really realize this until you are in a spot in your life where you are truly happy and realize that everything does happen for a reason. I remember when I was in 7th grade I entered a relationship with a boy and I just thought that this was it. I had found the person I was going to be with for the rest of my life. When he left my life I truly thought the world was going to end. Then a few months later someone else came into my life and I felt the same about him (I am not trying to down play my feelings for the guys I have been with in my life because I was with you guys for a reason and you are all great in your own little way and I loved all of each of you in a different way) and then sure enough someone else would come along and I would think "Oh Alexis, this is it. He is the one." When I think back on this...these feelings, I can see how I would feel that way. You fall in love with a lot of people. What I did not realize is that you can fall out of love just as quickly as you can fall in love. This is because you grow up. When you are younger obviously you are doing most of your growing up. Relationships happen and things are going great and then you both grow up and then grow apart. It happens.

The last few months of my life have been insane to say the least. I recently ended an almost 4 year relationship because of what I had mentioned before, we grew up...and grew apart.

I have read it in books. I have heard it on the TV. I have heard my mother talk about how she felt when she met my father for the first time. After hearing all these things I feel like I searched too hard to have that exact same thing. I lost hope in finding that love.

That is when it happens. When you least expect it. You finally let go of everything and someone comes into your life and makes you realize that it is possible.

This guy came into my life and kind of an inconvenient time. He is in the Marine Corps. I was in school and had a complicated life. Even though he came at the time he did, that did not bother him. I think he knew that life was kinda messed up for me, but he was still there for me. Actually, he said something to me when I thought my life was over and made me rethink everything in my life. He probably does not know this but what he said to me changed my life forever. He made me feel like I was not alone. He stepped up to the plate when he did not have to and was there for me. No one has ever made me feel like that before. When I found out he was leaving to live in Japan for two years I tried to block him from my life as much as I could because I knew the feelings I felt for him, and I did not want to be more hurt than I already was. Well, it was not until he was there that I realized I did not care that he was there and I was here. I did not want to not have him in my life. That was an eye opener for me. I realized that I truly have never felt this kind of emotion before, and I don't ever want it to go away.

I am happy that all my past relationships have failed because it has brought me to where I am today, and has been a part of who I am today. Those past relationships bring you to the person you are really supposed to be with.

Everything happens for a reason, and I have never been so happy about that in my life!

Just take life one spoonful at a time and it will eventually lead you to what you have been looking for your whole life. :)

1. You are creative. The artist is not a special person, each one of us is a special kind of artist. Every one of us is born a creative, spontaneous thinker. The only difference between people who are creative and people who are not is a simple belief. Creative people believe they are creative. People who believe they are not creative, are not. Once you have a particular identity and set of beliefs about yourself, you become interested in seeking out the skills needed to express your identity and beliefs. This is why people who believe they are creative become creative. If you believe you are not creative, then there is no need to learn how to become creative and you don't. The reality is that believing you are not creative excuses you from trying or attempting anything new. When someone tells you that they are not creative, you are talking to someone who has no interest and will make no effort to be a creative thinker.





2. Creative thinking is work. You must have passion and the determination to immerse yourself in the process of creating new and different ideas. Then you must have patience to persevere against all adversity. All creative geniuses work passionately hard and produce incredible numbers of ideas, most of which are bad. In fact, more bad poems were written by the major poets than by minor poets. Thomas Edison created 3000 different ideas for lighting systems before he evaluated them for practicality and profitability. Wolfgang Amadeus Mozart produced more than six hundred pieces of music, including forty-one symphonies and some forty-odd operas and masses, during his short creative life. Rembrandt produced around 650 paintings and 2,000 drawings and Picasso executed more than 20,000 works. Shakespeare wrote 154 sonnets. Some were masterpieces, while others were no better than his contemporaries could have written, and some were simply bad.

3. You must go through the motions of being creative. When you are producing ideas, you are replenishing neurotransmitters linked togenes that are being turned on and off in response to what your brain is doing, which in turn is responding to challenges. When you go through the motions of trying to come up with new ideas, you are energizing your brain by increasing the number of contacts between neurons. The more times you try to get ideas, the more active your brain becomes and the more creative you become. If you want to become an artist and all you did was paint a picture every day, you will become an artist. You may not become another Vincent Van Gogh, but you will become more of an artist than someone who has never tried.

4. Your brain is not a computer. Your brain is a dynamic system that evolves its patterns of activity rather than computes them like a computer. It thrives on the creative energy of feedback from experiences real or fictional. You can synthesize experience; literally create it in your own imagination. The human brain cannot tell the difference between an "actual" experience and an experience imagined vividly and in detail. This discovery is what enabled Albert Einstein to create his thought experiments with imaginary scenarios that led to his revolutionary ideas about space and time. One day, for example, he imagined falling in love. Then he imagined meeting the woman he fell in love with two weeks after he fell in love. This led to his theory of acausality. The same process of synthesizing experience allowed Walt Disney to bring his fantasies to life.

5. There is no one right answer. Reality is ambiguous. Aristotle said it is either A or not-A. It cannot be both. The sky is either blue or not blue. This is black and white thinking as the sky is a billion different shades of blue. A beam of light is either a wave or not a wave (A or not-A). Physicists discovered that light can be either a wave or particle depending on the viewpoint of the observer. The only certainty in life is uncertainty. When trying to get ideas, do not censor or evaluate them as they occur. Nothing kills creativity faster than self-censorship of ideas while generating them. Think of all your ideas as possibilities and generate as many as you can before you decide which ones to select. The world is not black or white. It is grey.

6. Never stop with your first good idea. Always strive to find a better one and continue until you have one that is still better. In 1862, Phillip Reis demonstrated his invention which could transmit music over the wires. He was days away from improving it into a telephone that could transmit speech. Every communication expert in Germany dissuaded him from making improvements, as they said the telegraph is good enough. No one would buy or use a telephone. Ten years later, Alexander Graham Bell patented the telephone. Spencer Silver developed a new adhesive for 3M that stuck to objects but could easily be lifted off. It was first marketed as a bulletin board adhesive so the boards could be moved easily from place to place. There was no market for it. Silver didn't discard it. One day Arthur Fry, another 3M employee, was singing in the church's choir when his page marker fell out of his hymnal. Fry coated his page markers with Silver's adhesive and discovered the markers stayed in place, yet lifted off without damaging the page. Hence the Post-it Notes were born. Thomas Edison was always trying to spring board from one idea to another in his work. He spring boarded his work from the telephone (sounds transmitted) to the phonograph (sounds recorded) and, finally, to motion pictures (images recorded).

7. Expect the experts to be negative. The more expert and specialized a person becomes, the more their mindset becomes narrowed and the more fixated they become on confirming what they believe to be absolute. Consequently, when confronted with new and different ideas, their focus will be on conformity. Does it conform with what I know is right? If not, experts will spend all their time showing and explaining why it can't be done and why it can't work. They will not look for ways to make it work or get it done because this might demonstrate that what they regarded as absolute is not absolute at all. This is why when Fred Smith created Federal Express, every delivery expert in the U.S. predicted its certain doom. After all, they said, if this delivery concept was doable, the Post Office or UPS would have done it long ago.

8. Trust your instincts. Don't allow yourself to get discouraged. Albert Einstein was expelled from school because his attitude had a negative effect on serious students; he failed his university entrance exam and had to attend a trade school for one year before finally being admitted; and was the only one in his graduating class who did not get a teaching position because no professor would recommend him. One professor said Einstein was "the laziest dog" the university ever had. Beethoven's parents were told he was too stupid to be a music composer. Charles Darwin's colleagues called him a fool and what he was doing "fool's experiments" when he worked on his theory of biological evolution. Walt Disney was fired from his first job on a newspaper because "he lacked imagination." Thomas Edison had only two years of formal schooling, was totally deaf in one ear and was hard of hearing in the other, was fired from his first job as a newsboy and later fired from his job as a telegrapher; and still he became the most famous inventor in the history of the U.S.

9. There is no such thing as failure. Whenever you try to do something and do not succeed, you do not fail. You have learned something that does not work. Always ask "What have I learned about what doesn't work?", "Can this explain something that I didn't set out to explain?", and "What have I discovered that I didn't set out to discover?" Whenever someone tells you that they have never made a mistake, you are talking to someone who has never tried anything new.

10. You do not see things as they are; you see them as you are. Interpret your own experiences. All experiences are neutral. They have no meaning. You give them meaning by the way you choose to interpret them. If you are a priest, you see evidence of God everywhere. If you are an atheist, you see the absence of God everywhere. IBM observed that no one in the world had a personal computer. IBM interpreted this to mean there was no market. College dropouts, Bill Gates and Steve Jobs, looked at the same absence of personal computers and saw a massive opportunity. Once Thomas Edison was approached by an assistant while working on the filament for the light bulb. The assistant asked Edison why he didn't give up. "After all," he said, "you have failed 5000 times." Edison looked at him and told him that he didn't understand what the assistant meant by failure, because, Edison said, "I have discovered 5000 things that don't work." You construct your own reality by how you choose to interpret your experiences.

11. Always approach a problem on its own terms. Do not trust your first perspective of a problem as it will be too biased toward your usual way of thinking. Always look at your problem from multiple perspectives. Always remember that genius is finding a perspective no one else has taken. Look for different ways to look at the problem. Write the problem statement several times using different words. Take another role, for example, how would someone else see it, how would Jay Leno, Pablo Picasso, George Patton see it? Draw a picture of the problem, make a model, or mold a sculpture. Take a walk and look for things that metaphorically represent the problem and force connections between those things and the problem (How is a broken store window like my communications problem with my students?) Ask your friends and strangers how they see the problem. Ask a child. How would a ten year old solve it? Ask a grandparent. Imagine you are the problem. When you change the way you look at things, the things you look at change.



12. Learn to think unconventionally. Creative geniuses do not think analytically and logically. Conventional, logical, analytical thinkers are exclusive thinkers which means they exclude all information that is not related to the problem. They look for ways to eliminate possibilities. Creative geniuses are inclusive thinkers which mean they look for ways to include everything, including things that are dissimilar and totally unrelated. Generating associations and connections between unrelated or dissimilar subjects is how they provoke different thinking patterns in their brain. These new patterns lead to new connections which give them a different way to focus on the information and different ways to interpret what they are focusing on. This is how original and truly novel ideas are created. Albert Einstein once famously remarked "Imagination is more important than knowledge. For knowledge is limited to all we now know and understand, while imagination embraces the entire world, and all there ever will be to know and understand."





And, finally, Creativity is paradoxical. To create, a person must have knowledge but forget the knowledge, must see unexpected connections in things but not have a mental disorder, must work hard but spend time doing nothing as information incubates, must create many ideas yet most of them are useless, must look at the same thing as everyone else, yet see something different, must desire success but embrace failure, must be persistent but not stubborn, and must listen to experts but know how to disregard them.

Passion.

The dragonfly normally lives most of its life as a nymph or an immature. It flies only for a fraction of its life and usually not more than a few months. This adult dragonfly does it all in these few months and leaves nothing to be desired. This style of life symbolizes and exemplifies the virtue of living IN the moment and living life to the fullest. By living in the moment you are aware of who you are, where you are, what you are doing, what you want, what you don’t and make informed choices on a moment-to-moment basis.
This ability lets you live your life without regrets like the great dragonfly.


This my friends is one of the best ways to explain why dragonflies mean so much to me.

When I was younger I lost my cousin to suicide. At the time I didn't even understand what that was. All I knew is that he was gone. Maybe I didn't understand suicide, but I understood death, sadness, and loss. I could see it in everyone's face. After my cousin was gone my aunt gave us all dragonfly necklaces. Like before, I didn't understand the meaning of the dragonfly until I was a little bit older, but it still meant so much to me because in a way dragonflies meant Kasey. They still do.

Dragonflies represent Change. Luck. Hope. Living in the moment. No regrets.

You never know when your life is going to end so don't take it for granted. Today might be a bad day, but the sun is going to rise tomorrow and you will get a fresh start.

The dragonfly exhibits iridescence both on its wings as well as on its body. Iridescence is the property of an object to show itself in different colors depending on the angle and polarization of light falling on it.

This property is seen and believed as the end of one’s self created illusions and a clear vision into the realities of life. The magical property of iridescence is also associated with the discovery of one’s own abilities by unmasking the real self and removing the doubts one casts on his/her own sense of identity. This again indirectly means self discovery and removal of inhibitions.

Another reasons why dragonflies mean so much. There are so many people in the world who have doubts about themselves. Do me a favor? Look in the mirror and tell me what you see. You will find that there are many colors to you. You are amazing. Find who you are.

Don't waste a minute of your life. And live life with no regrets.

Food Blog!!!

I named my blog One Spoonful at a Time for a reason. Not just because it means you have to take like one spoonful at a time, but it also ties in with my love of food!!! I am going to start posting blogs about the food that I make along with the recipes!!! So, here we go!!!



The picture above is Planked White Fish and Green Onion Butter, Corn and Wild Rice Cakes, Pickled Onions, and Marinated Red Peppers.

Planked White Fish

4                    untreated cedar wood planks or shingles 4x6 x 1/2 inch
1/2 cup          butter, softened
1                     egg yolk
2 Tbsp            lemon juice
1 Tbsp            Dijon Mustard
1/4 cup           bread crumbs
1/4 cup           green onions, chopped
2 Tbsp            parsley, chopped
1                     garlic clove, smashed
1/4 cup           vegetable oil
4                     white fish fillets, skinned and boned
                        salt and pepper, to taste

1. Soak the cedar planks in water for atleast a few hours before proceeding. 
2. Mix the butter, egg yolk, lemon juice, mustard, bread crumbs, green onions, parsley, and garlic in a food processor. Pulse for 1 minute to combine into a paste. Roll paste into a cylinder about 1 inch thick and wrap in plastic wrap. Place in refrigerator until firm. 
3. Preheat oven to 450 degrees F
4. Remove the planks from water, dry. Brush planks with the oil, and place in the oven on a baking sheet for 5 minutes. to begin seasoning the wood.
5. Brush the fish with oil and season with salt and pepper
6. Remove paste from refrigerator and cut into 1/4 inch thick slices. Place 1 to 2 slices on each fillet.
7. Place fish on the hot plank and return to oven. Bake fillets for 8 to 10 minutes. until butter has melted to brown crust.
8. Remove and serve immediatley

**** You can use any kind of fish you would like for this recipe.
**** When cooking the fish you want to be careful not to overcook it. You want to make sure that the fish is slightly flaky
**** When we made this recipe our butter did not melt onto the fish and make a brown crust. It just kind of got toasted and then when we plated the fish we spread the butter with a fork and it turned out perfect.


Corn and Wild Rice Cakes

1 1/2 Tsp                    butter
3/4 cup                        leeks, cleaned, white part only, very thinly sliced
1                                  garlic clove, minced
1/2 cup                        corn kernals, fresh or frozen
1 cup                           wild rice, cooked
1                                   egg, lightly beaten
1/4 cup                        heavy cream
1 Tbsp                         parsley, chopped
1 Tbsp                         chives, chopped
1/4 Tsp                        black pepper
1/2 Tsp                        salt
1/4 cup                        all purpose flour
                                     vegetable oil, as needed

1. Heat butter over medium heat. Cook leeks and garlic until soft. 
2. Combine leeks, garlic, and corn with wild rice. 
3. Mix egg and cream together until blended. Mix chopped herbs, pepper, and salt.
4. Combine the wild rice with the egg cream mixture. Stir in flour until rice can be formed into cakes. You may need to add more or less flour. 
5. Form cakes using 1/3 cup. Chill for 30 minutes. 
6. Saute cakes in oil until lightly browned. about 3 minutes per side


Pickled Onions

4 cups                     pearl onion
1 Tbsp                     mustard seeds
1 Tbsp                     celery seeds
1 piece                    fresh horseradish
1 cup                        cider vinegar
3 Tbsp                     honey
2                               hot chiles, fresh or dried

1. Bring a large pot of water to a boil, add the onions and cook for 2 minutes. 
2. Drain in a colander and rinse under cold water. Trim away the onion tops and hairs at the stem end. Leave the base of the stem end intact, then peel.
3. Combine mustard seeds, celery seeds, horseradish, and vinegar. Bring to a boil, then simmer for 15 minutes. 
4. Add honey and chili pepper. Remove the horseradish and simmer another 10 minutes. 
5. Add onions and cook until tender, about 10 minutes. 
6. Remove onions and continute cooking liquid until reduced by half
7. Poor liquid over onions.

**** You can use any kind of onions you would like for this recipe

Marinated Red Bell Pepper

1                  Red Bell Pepper, seeded, julienned
                    Salt and Pepper, as needed
                    Garlic, minced, as needed
                     Olive oil, as needed

1. Seed and julienne pepper
2. In a bowl, combine olive oil, salt and pepper, and garlic.
3. Toss the red bell pepper in oil mixture.
4. Marinate in refrigerator for desired time.



This is one of the meals that we worked on in my American Regional class at school. I will be posting more pictures and recipes of the food I prepare and share it with all of you.

When I am in trouble and I am in need of guidence or a path to follow I do not look to God. I do not look to religion. I look to myself. I look to my heart.

No one can tell you how to run your life. No one else can make your decisions. Its all you. You need to learn to trust yourself and just jump sometimes.


Ahhhh I am so happy I came across these lyrics. They already mean so much to me.


Life is not easy, but the one thing we can do to make it easier on ourselves is just trust ourselves. Give yourself a chance. When you are in need of someone look to yourself and you will see that you can provide your light.

It is inside everyone, you just need to find it.

Feeling thankful

I am really lucky to have the family I have. I have always known this, but some days make it more known than others. Like today for instance.

I was at work and most of the people I work with have children so they were talking about their troublesome children and how they dicipline their children and the other thing I really had to go off of is how I was raised.

When I was younger I thought that sometimes my parents were the meanest people and I just hated some of the things they did and they always said you are going to thank me when you are older and other things to that affect and I never believed until I got a little older.

Listening to some of the moms I work with asking what they should do with their children or what they have been doing I just feel so thankful that I was raised by my parents.

Speaking of being thankful....Its November 2nd and that is making me think about Thanksgiving!!! and Chirstmas!!!! This time of the year I try to think about everything that I am thankful for. When I was younger the only thing I really focused on was the food and the presents, and dont get me wrong that is what I think about now too hahaha but I think about giving and being thankful for what I have more.

I couldnt have asked for a better family. They are supportive. They are loving. They are fun. They are exciting. They are goofy. They are crazy. And I love them more than words can describe. If I ever need anything I know I can always go to someone in my family and get the help I need, and that is how it has always been, and I realize not everyone has that.

I am so thankful that I have the opportunity to go to school. Going to culinary school has turned my whole life around. It actually makes me feel like I have meaning in life. It makes me feel like I am doing something with my life and I am actually going to succeed. Its a great feeling.

There is just so much I could go on forever about how lucky I am and why. I cant wait to start getting things together to take to the road home. Last year me and Katie got a TON of stuff together and took it their and it felt so rewarding.
